Because fighting a losing war for twenty years and then having to pay money to make repairs that could be easily avoided is just what the Sith wanted for Christmas.... "So...rather then concede the day, you decided it'd be a good idea to try to kill one of your lords by hurling pieces of our ship at her because.....?" Pretty good example of winning the battle and utterly losing the war. A good hit to the temporal lobe could cause very specific personality changes - a good example is a person who, upon reception of a specific sensory trigger, blacks out and gets more than a wee bit violent, displaying some very unusual behavioral characteristics in the process (look up details before deciding you want a character with this sort of brain injury!) - and then of course there are frontal lobe injuries, which, well... yeah. And then of course there's injuries to other parts of the body - a hard enough hit with part of a wall could cause kidney damage, for instance. It would, of course, depend on the weapon, but yeah, there's nothing that would limit a Jedi/Sith to just a lightsaber. They've used everything from broadswords to sticks.
