I remember something like that as well, but I think he said that if they did die, it would be more or less like we do. What I was wondering though is how long do bionicle people live? do they ever grow old?

Nothing lasts forever. The Toa are still vulenrable, and there are multiple weaknesses that may be acted upon.

Well, actually Bionicle means Biological Chronicle. Therefore they are still biological but also mechanical. (biomechanical) *remember the robot noises they make in the MNOLG* 
Having that said I do think that that they can die because..say if one of the Matoran where sliced in half some how. Since they are living biological creatures they would die because they couldn't make the mechanical or the biological part function right and couldn't go on living.
Another point is that why would they be scared of any enemies if they were immortal? You could just stand in front of a Rahkshi and wouldn't care!

I would say the Toa were immortal.One of the Toa will lose their powers, they would probably be dead if they could die. Also, Kopaka is only weakened by fire, he would probably be killed by it if he could die. However, it's a different story for the Matoran. If Matoran were immortal, why would Maku have worried about Huki? Also, in the MNOLG, Nokama and the Ga-Matoran didn't know how long they could survive underwater. Another thing is that Maqtoran have been attacked and probably killed by Muaka. I am 100% sure that the creatures die,asthe naturalists of Le-Koro fear extinction of some species, which poins towards the Matoran dying.

It whould be logical if they did die(but not of old age). so that is probley the answer(though I am not sure of it).

Yea...Immortal...but can be killed by stuff(Kopaka, for the sake of argument, might live to 4,000,000,000 and then be killed off by...falling into Mangai Volcano?)

If Toa/Mata-Nuians couldn't die...then there really wouldn't be any danger now would there?
Yes. All Mata-Nuians can die. Though LEGO may never outright say it, that's where the danger and excitement comes from.
