They were sort of in the story, only the big one, though. It fought a Nui Jaga!
EDIT-It was only in the minicomic.

Well it could go back into the storyline it's just kinda tacky when we only get to see him only fight once

They're just made to be fun to build. So far all the kaitas but the toa and kal and nuva kaitas haven't been used. The matoran are just supposed to be villager anyway

Aha! There are several mistkaes in that list. Nui-Kopen appeared in the MNOG 1, with the battle between Onua and Lewa. Bohroh-Kal Kaita and Toa Nuva Kaita appeared the comics

Basically, almost all Kaitas apart from the main characters are made simply to give you something extra to bild once you have the right sets.
It's just extra play value.

Maybe before the toa arrived, the matoran had to defend themselves like that?

I think the Matoran combining is kind of cheesy. I mean, I can understand Bohrok-Kal and Toa/Nuva, and maybe even Turaga! But everything else shouldn't appear in the storyline.
Note: If anyone knows where to find instructions on building the Turaga Kaita, PM me.

The combiners were just a cool thing that lego added for playing value. They haven't used any of the Rahi combiners either, or the Bohrok Va combiner, so it's no surprise that they haven't used this one yet.

There isn't a Kaita,but there is a combiner with 4 Turaga(Vakama,Matau,Nokama and Nuju)
It is from the Japanes Kabaya candy or something.
And they did the same with 4 Bohrok-Va(Lhvak-Va,Nuhvok-Va,Gahlok-Va and Tahnok-Va)
