I just realised, in the update on bionicle.com, tahnok-kal steals Tahu's symbol, but in thefilm thing, Gahlok-kal has his symbol. What is going on here?

Maybe Gahlok-Kal isn't smart enough to get a symbol, and every time he tries to get one he gets defeated. So, Tahnok-Kal gives Gahlok-Kal the symbol he got, and Tahnok-Kal went back out to get another one.
That's my idea.

I'd assume it was a mistake, since Tahnok Kal stole Tahu's symbol by himself.

Yea, it was probably just a mistake, and as I've said in the past, everyone makes mistakes, even if you work for LEGO.

Gahlok-kal couldn't steal Tahus symbol because she(or he)was stealing Pohatus(the sticking coats).

I think that Lego/Bionicle just didn't realize what they did. Someone should PM GregF about that...

what i don't get is that every toa exept for tahu and Kopaka in MNOLG were face with the opposite element.
Pohatu & Gahlok-Kal
Lewa & Nuhvok-Kal
Onua & Lehvak-Kal
Gali & Pahrak-Kal
In Mnolg tahu attacked by tahnok-kal
In comic kopaka's symbol stolen be kohrak
Its very confusing but i think the mix-up with bohrok-kal are just different alternatives to the storyline!

The Bohrok-Kal were not in the MNOLG. I presume you mean the updates.
And as far as Kopaka Nuva's symbol goes, Nuhvok-Kal was around somewhere, or GregF got his powers mixed up. If you'll remember, Matoro suddenly became very heavy, indicating increased gravity. Regarding Gahlok-Kal carrying Tahu Nuva's symbol, perhaps those two Kal were working together at Ta-Koro. Magnetism and electricity are closely related. Maybe Gahlok-Kal created magnetic fields to keep Tahnok-Kal's electricity shocking the Matoran, or something like that. (I just know some physics whiz is going to shoot this theory down, so I say in advance: It's as believable as some of the things Magneto does!)
