There are a lot of layered cocktails out there, actually (the B-52 isa common one). It's possible because of the different densities of different liquids. Baileys is lighter than cognac, for instance, and thus if carefully poured on top, it'll stay layered above it. Same principle as oil and water (ever notice how Italian dressing separates into layers when it sits in the bottle for a while?).
