Recipe: Mediterranean Spring Feast
Here's what I had today. Thought I'd share.
Ingredients:
2 crunchy tomatoes
½ deep green zucchini
1 good, strong onion
half a dozen fresh champignons
1 clove crushed garlic
sea salt
black pepper
thyme
olive oil
and just a little sprinkle of light balsamico vinegar.
Directions:
Dice up the vegetables and the mushrooms.
Add them to the skillet together with a tablespoon or two of olive oil.
Add the salt, spices, garlic, and vinegar.
Stir fry for 5-10 minutes. Don't overdo it! You want the vegetables to retain some crunchy freshness and healthy vitamins.
Serves one hungry bachelor(ette). Smells like pizza, too. =D Enjoy!
