EDIT: A little later than "in the morning", but here you go. I know mostly CTM maps, not very many updated adventure maps, but here is what I got. I just assumed that you haven't played any CTMs and chose easier ones for that portion of the post.

Anything from Hypixel is certain to be super polished and pretty, but the gameplay has always been kinda meh to me.

An old one, "Fear in a Handful of Dust" was an amazing map, I don't know if it has every been updated.

"The Dropper" takes a fairly interesting idea and expands it really well.

Those are some more standard adventure maps, some (easier) CTM maps that are good are:

"Dreadsky Isles" by Drago

I have heard "To Greener Pastures" by Karrot is good

And the original "Infernal Skies II" by Vechs is pretty good.
