Easy Recipes From Smeag: Chicken And Pasta In Creamy Sauce

Sorry I haven't posted any of these in a while! I've been busy. I have a backlog of them built up however, so expect to see them frequently posted.

 

This recipe is one I actually created myself the other day. I was running low on food (I finally got around to grocery shopping two hours ago today!) and had to whip something up creatively. But that's the nice thing about cooking - you can experiment. So this entire recipe was literally made up entirely as I went along. It turned out to be incredibly delicious and super-easy, though!

Ingredients

  • Two boneless chickens breasts (or roughly a pound)
  • 1/2 a package of frozen whole kernel corn
  • 1/3 can creamy chicken and dumplings soup (not normal chicken soup)
  • Roughly 1 Tablespoon of canola oil
  • Basil, Oregano, Italian Seasoning, Paprika, Garlic Powder, and Chopped Onion to taste (use lots!)
  • 1/2 pound pasta (I used rotini)

    Plus any other spices or vegetables you wish to add! I would recommend diced tomatos and maybe some green pepper!

Preparation

This might seem a little disjointed because I was making it up as I went along. Cut up the Chicken into small chunks. Heat up the oil in a skillet and then cook the chicken on that. After it is cooked, removed it from the skillet and place it aside on a plate. Then add the corn to the skillet and cook. After it is heated, dump in the soup and spices and any other vegetables you wish. While these are heating, Boil the pasta. Add the chicken back to the skillet after everything on that is heated and put the range on low, leaving it to simmer gently. After the pasta is finished, drain, and mix in the chicken/corn/creamy-sauce mixture. You're done!

Now wasn't that easy and delicious? For a vegetarian version of the recipe, leave out the chicken and use a vegetable-based cream soup (Cream of Asparagus, Cream of Broccoli, Cream of Celery, et cetera).

Man, when you were sharing that recipe the other day, my mouth was all set for juicy chicken, and the chicken we had for dinner was super dry. XP I'll have to add this to my recipe binder and try it out on the family.

It sounds good, although I'm not sure if I'll like it with the corn. I usually don't like corn mixed in with stuff. Nevertheless, I'll bookmark this i case I ever need an easy recipe.
