I'm working, most likely seven days this upcoming week (starting Thursday) to prep a ton of rolls and desserts for Thanksgiving brunch for around 450 people. I will be working Thanksgiving as well. Yaaaaaaay.

Holy moly that is crazy. 

 

Like, wowww that is a lot of rolls. I like to have 2 or three rolls in a meal, so that is like, what? 900-1350 rolls? And that isn't even counting deserts!

 

Whew. That sounds rough. Will you get to visit with your family at all over the next few weeks or are you going to be working all the time?

Well I'm actually living at home right now, so I will definitely be seeing my family. I also have a headstart on a few products, like prepping unbaked pie shells and I have around 660 or so rolls baked off already. I'm shooting for around 1,200 total, so it's only around halfway done. Thanksgiving is usually the busiest holiday I work, so once it's all over I can breathe, relax and start prepping for Xmas eve and Xmas day. TTuTT The good news is that our orders are low this week and thanks to the recent snow, fewer people are walking into the restaurant. That means more time to focus on prep, which is a huge help. Being the only baker for a big event can be intimidating, but it's my second holiday season at this job, so hopefully things will run smoothly. Planning helps.
