It depends on how stable the head is. If it doesn't fall apart when the breeze rolls around or when you walk by it, I think you can be pretty safe leaving it together.
And yes, stuff can get soaked pretty easily when it get shipped overseas. Baggies are definitely the way to go. I've received parts from overseas, and the packaging looked like it had been through a hurricane, but the parts were perfectly fine as they were in baggies.

I sent some of my MOCs last year. What I suggest is breaking down the MOCs into smaller components, putting those components into small ziploc bags, put those bags as well as a small set of picture instruction thingies, into a larger ziploc bag, wrap that bag in bubble wrap, and then put it in a pretty tight fitting that has some packing peanuts in it.
Since you're shipping your stuff overseas, the baggies are a must. You don't want your parts getting soaked.

As long as it doesn't conflict with my newly acquired job, I'll be there. If it does, then prolly of a few of my MOCs will be there. The plan, however, is to go in person (and hopefully bring two of my non-FOL [yet] friends along too)

I have a Chrome Hau. I could prolly do some extreme bartering for it too, as I am coming to Brickfair as well.
Oh, and something about the big smooth things on the lower legs isn't really jiving with me. Though I figure you're most likely going to do something about that.

Also, they just did a contest where people had to use specific parts. BBC 56 if I'm remembering correctly. Which ever one had the blue axlepins and red axles.

^Maybe subconsciously. I didn't really look at anything else when I updated the arms and legs. In fact, the arms were made because I was just messing with some connections on the Technic Fig Legs.

@Laka: We just got AP US History this year, so any senior that wanted to take it could. About half my class was Sophomores. I had actually already taken a US History class when I was a Sophomore, and I had AP Government and Politics last year, so US History was pretty easy.

Don't use a black background for a white MOC unless the exposure is set pretty low, otherwise the MOC will become pretty washed out. Maybe use a dark blue background? Or maybe dark red. It really depends on the colors in the MOC.

I don't really know how stretchy the Piraka heads are, but maybe you could make it so that the dudes face was coming out of Avak's mouth? Or, you could make it so that there were eyes on the inside to make it look like the dude's wearing the skull as armor.
Maybe something like this guy:
